Tossed in a creamy dressing of whisked curd, lemon juice, and a hint of spices, it's a refreshing and nutritious dish perfect for hot summer days. Enjoy it chilled and crunchy!
Ingredients:
Homemade low fat curd/yoghourt whisked creamy(can be altered with vegan curd) - 1/2 cup
Tomato chopped - 1
Radish sliced - 1
Onion chopped - 1
Cucumber chopped (Deseed) - 1 medium
Lemon juice - 1 tbsp
Black pepper - ¼ tsp
Salt as needed
Coriander chopped (optional)
Phycocyanin - 1 scoop
Method:
1. In a large salad bowl, mix all the vegetables and lime juice together
2. In another small bowl mix phycocyanin, curd, pepper, salt and coriander.
3. Add the dressing to the salad bowl
4. Cover it and let it sit for 2 hours in the refrigerator.
5. Serve it crunchy and chill!
Note: The dressing may turn blue due to Phycocyanin, which is normal.
